    Ingredients

    Cake
    • 1 1/2 cups (188g) All-Purpose Flour
    • 2 teaspoons baking powder
    • 1/4 teaspoon baking soda
    • 1 teaspoon kosher salt
    • 4 tablespoons (56g) butter, room temperature
    • 2/3 cup (134g) granulated sugar
    • 3 tablespoons (45mL) vegetable oil
    • 2 large eggs, room temperature
    • 1 tablespoon vanilla extract
    • 3/4 cup (180mL) buttermilk, room temperature
    • 6 large cookies, chopped
    Topping
    • 1 1/2 cup heavy whipping cream, cold
    • 2 tablespoons powdered sugar
    • 1 tablespoon vanilla bean paste
    • 2 cookies, chopped (for garnish)

    Method

    1. Preheat your oven to 350°F and grease and line an 8-inch cake pan with parchment paper.
    2. In a medium bowl, combine the flour, baking powder, baking soda, and salt.
    3. In the bowl of stand mixer, cream the butter, sugar, and oil together for 5 minutes until lightened in color.
    4. Add the eggs, vanilla extract, and buttermilk. Combine together.
    5. With the mixer on low, pour in the dry ingredients and mix until the dry just disappears.
    6. Fold in the chopped cookies and pour into the prepared cake pan.
    7. Bake in oven for 24–27 minutes, or until a cake tester comes out with a few crumbs. Let cool fully.
    8. Add heavy whipping cream and powdered sugar to a bowl of stand mixer and whip on medium until soft-medium peaks form.
    9. Add the vanilla bean paste and mix for an additional 5 seconds.
    10. Add cake to the cake stand/serving plate.
    11. Dollop whipped topping and garnish with cookies.
