Ingredients
- Soup vegetables (onion, celery, carrot, bell pepper, shallot)
- Garlic
- Herbs (parsley, basil, rosemary, oregano)
- Broth (vegetable, chicken, beef)
- Meat (optional — chicken, beef, sausage, pork)
- Beans (chickpeas, cannellini, pinto, butter beans, etc)
- Olive oil
- Salt to taste
- Parmesan, asiago, pecorino, or other similar cheese, to serve
Method
- Heat a large pot over medium heat. Once a sprinkle of water skates on the surface of the pot, add olive oil.
- Dice and add vegetables. Add salt. Cook for 3-5 minutes.
- Add minced garlic. Cook for another 2-3 minutes.
- Add broth.
- Add chopped herbs, then bring the broth to a boil and lower heat to simmer.
- In a separate pan, cook meat. If cooking whole, dice cooked meat and add to pot.
- Add beans.
- Grate/sprinkle parmesan/asiago/pecorino/other cheese or add 1-2 tsp of olive oil and serve.
Notes
- Optional, once the broth is in: use an immersion blender to cut the vegetables into tiny pieces.
